Best Neapolitan pizza restaurant in Seattle
There are two Tutta Bella restaurnts in Seattle--only two: On Stone Way in Wallingford and at Rainier South and Hudson. It is unqualifiedly the best pizza I have eaten on the West Coast. And the tiramisu is to die for.
The inspiration for Tutta Bella Neapolitan Pizzeria stems from a passion for the authentic, fire-roasted pizzas born in Naples and found throughout Italy. For a century and a half, the pizza makers (or “pizzaioli” as they are known in their home town) of Naples have been producing unique, mouth-watering pizzas using the freshest ingredients available. It is estimated that nearly 7 million of these pizzas are produced in Italy every day.
In the mid-1990s, a group of pizzaioli decided to join together to create an organization, Associazione Vera Pizza Napoletana, to defend the integrity of their product. They sought to establish a DOC (denomination of control) for pizza, a designation that can be compared to winemaking DOC zones. For wines, the Denominazione di Origine Controllata outlines the permitted ingredients and defines the production process. For DOC Pizza Napoletana, the process encompasses everything from specifying the origin and freshness of the basic ingredients to the stone cooking surface of the oven.
In June 1998, the good news arrived: authentic pizza napoletana, “Verace Pizza Napoletana”, had become a protected legal entity. The regulations do not state that the pizza must be made in Naples, thus opening the opportunity for any restaurant in the world to make the DOC guarantee that the production of their pizzas meets the association’s strict requirements. To date, only a handful of pizzerias in the United States have chosen to do so-- Tutta Bella Neapolitan Pizzeria is the first restaurant in the Northwest to be DOC certified. The restaurant received its VPN certification on April, 3 2004. The owner, Joe Fugere has been trained and certified as a pizzaiolo.
